Basic ingredients: Based in the heart of Dublin and touting itself as the city’s ‘premier cookery school’, Cooks Academy was founded by Vanessa and Tim Greenwood in 2005. This stylish cookery school was established after Vanessa left the world of business and decided to combine her passion for cooking and teaching. Tutors at Cooks Academy include experienced professional chefs, former caterers and wine experts, but the school has also seen visits from celebrity chefs such as Rick Stein. The well-equipped academy has cooking facilities for up to 72 people, as well as an 80-seater demonstration theatre. There are month-long, week-long, weekend and evening courses divided into demonstrations and ‘Hands On’.  A diverse line-up of courses includes chocolate, Men Only and sauce workshops, food demonstrations for Moroccan, Malaysian and Vietnamese cuisines and the ever popular Fast One Pot Cooking class. Course prices vary but three-hour ‘Hands On’ sessions start from €65, while week-long courses are €375.

They say: The unique mix of elegant and purposely fitted out premises together with a relaxed, fun and educational environment has ensured the school’s success and excellent reputation.
We say: Cooks Academy offers such a huge range of courses, choosing just one could prove difficult. The week-long courses offer particularly good value. The Dublin Wine Academy is part of the cookery school and offers separate course for budding wine enthusiasts including the WSET wine certificate. Accommodation is available just around the corner from at the boutique hotel Brooks on Drury Street
