Kent cook, will cook

It’s all smiles and spices on Dev Biswal’s interactive cooking evenings held at The Ambrette, his contemporary Indian restaurant in Margate, on the increasingly seductive Isle of Thanet.

Biswal’s skill is to combine all that lovely local produce from the coast and Garden of England with Indian spices and techniques. The result is dishes such as fillet of local seabass crusted with aromatic spices, mustard and ginger sauce, and Indian-style vanilla rice pudding. The Sampler and Sensation evenings are reasonably priced at £40 and come recommended by Metro restaurant critic Marina O’Loughlin, co-author of Discover Thanet (£4.99, Discover Thanet Publishing)
