Basic ingredients: Chef’s chef Paul Tannery’s cookery school and restaurant are foodie beacons in Waterford. The school has a cool modern kitchen with workstations offering space for 12 people at practical classes and 28 at demonstrations. The Paul Flynn’s Kitchen course is “a complete immersion in food for five days”, according to his wife Máire, and with guest chefs such as Richard Corrigan and Tamasin Day Lewis dropping in the school offers some of the classiest teaching available. Practical courses, such as King of the Kitchen and Back to Basics, cost about £160 for a full day, with demos at £125, including lunch.
